The Portugal Nature Lodge cooks an African peanut stew

A favorite recipe from Joke and Peter, hosts of the Portugal Nature Lodge

Admittedly, this is not a typical Portuguese dish, but this African peanut stew goes well with our safari and lodge tents (... and also tastes good in the yurt!). This delicious dish is also very popular with our guests. So we hope you enjoy it too!

Ingredients for the African peanut stew:

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, chopped
  • 1 red pepper, diced
  • 1 green, elongated bell pepper, chopped
  • ½ teaspoon cumin powder
  • 1 medium-sized sweet potato, cut into 1 cm cubes
  • 800 g can of tomatoes, chopped
  • Sea salt and black pepper
  • 85 g smooth, natural peanut butter
  • 1 l vegetable stock
  • ½ teaspoon chili powder
  • 425 g can of chickpeas, drained and rinsed
  • 2 handfuls of spinach or kale, chopped
  • 100 g cooked rice, brown or white
  • Chopped coriander leaves and peanuts for serving

Preparation:

1. In a large saucepan, sauté the onions and garlic in the olive oil until the onions are translucent.

2. Add both peppers and cumin and stir for one to two minutes. Add the sweet potato and the can of tomatoes and bring to the boil. Simmer for 5 minutes. Add salt and pepper to taste.

3. Put the peanut butter in a small bowl and stir in some of the vegetable stock until you get a smooth puree. Add a little more vegetable stock and add everything to the pot. Stir until everything is well mixed.

4. Add the rest of the vegetable stock and, if you like, the chilli powder, cover and cook for about 20 minutes until the sweet potato is cooked through.

5. Stir in the chickpeas, spinach or kale and the cooked rice and simmer for a few more minutes until the spinach or kale is soft.

6. Serve with the coriander leaves and a small handful of peanuts. Just enjoy it or serve it with homemade flatbread!

tip:

Like many stews, the African peanut stew tastes even more intense a day later!
