Minestrone in a pot

Minestrone recipe

Serves 4 people:

1 onion, finely diced
1 clove of garlic
500 g vegetables (carrots, celeriac, potatoes)
Depending on your preferences, add other seasonal vegetables such as zucchini, peas, and cauliflower, cut into equally sized pieces.
2 tbsp olive oil
1 ml white wine
600 ml vegetable broth
150g peeled and diced tomatoes
Thyme, oregano, parsley, basil
4 tablespoons of Parmesan shavings
salt and pepper

The quantities depend on the number of ingredients.
As a rough guide, I always imagine how much vegetables a portion looks like.

Preparation instructions from the founder and chef Erwin:

Heat the olive oil in a large pot and add the diced onion. Sauté for a few minutes until softened and almost translucent. Then add the thinly sliced ​​carrots, celery, and potatoes, and cook over medium heat for about 5 minutes to allow the flavors to develop. Add the minced garlic and cook for another minute. Now stir in the diced tomatoes, stock, white wine, oregano, thyme, salt, and pepper, and bring to a boil. Reduce the heat and let the soup simmer gently for about 10 minutes, until the vegetables are tender but still have a slight bite. The cooking time is shorter than you might think, so keep a close eye on it. Finally, stir in the chopped parsley.

Serve the minestrone warm and garnish generously with Parmesan shavings and fresh basil. A wonderful dish, full of flavor and nutrients. Easy to prepare and perfect for a cozy evening. Let yourself be inspired by the variety of vegetables available in each season.

Tip: I prefer to eat minestrone lukewarm, slightly above body temperature – this is when the fresh taste is most intense.
