Gluten-free carnival doughnuts

The hotel also specializes in gluten-free dishes, as the hostess, Ruth, has an intolerance herself but doesn't want to miss out on delicious food. 

For Good Travel readers, there is therefore a particularly lovely, seasonal and gluten-free recipe to bake yourself: Carnival doughnuts.

Recipe for Gluten-Free Carnival Doughnuts

Ingredients for approximately 20 pieces:

For the pastry:

500 g light gluten-free bread flour

a pinch of salt

Lemon zest (to taste)

3 tablespoons of raw cane sugar

8 g vanilla sugar

1 tsp ground psyllium husks

1 package of dry yeast

3 beaten egg yolk

70 g butter

340 ml warm milk

Other:

Some jam for filling

1 egg white for brushing the edges

Butterfat or sunflower oil for baking

A little powdered sugar for sprinkling

 

Preparation:

Mix the flour with salt, lemon zest, raw cane sugar, vanilla sugar, ground psyllium husks, and yeast. Whisk the egg yolks and butter with the milk and add to the flour (the dough should not be too dry). 

Flatten the yeast dough on a floured baking board with your hands (do not roll!) and cut out circles. Place a small dollop of jam in the center of each circle. Brush the edge with egg white and place another circle on top. Press the edges firmly together with a fork. 

Let the doughnuts rise, covered, at room temperature for about 1 hour. 

Heat the fat or oil in a pot and fry the doughnuts until golden brown. 

Sprinkle with powdered sugar.
