Kaiserschmarrn – winter delight from the Zugspitz region
What could be better than treating yourself to a delicious Kaiserschmarrn in the cold season? This traditional recipe from the Alpine kitchen is perfect for cozy Advent afternoons. Easy to prepare and a treat for young and old. So, get to the pan and let winter melt in your mouth!
Kaiserschmarrn recipe
Ingredients:
3 eggs
100g flour
1 / 8 l milk
1 tablespoon sugar
Optional: raisins, apple sauce, cranberries or plum compote
Preparation:
Separate the eggs and whisk the egg whites with a pinch of salt until stiff. In a second bowl, beat the egg yolks and sugar until foamy, add the flour and milk and mix everything into a viscous dough. Then carefully fold in the egg whites and, if desired, the raisins.
Melt clarified butter in a pan and add the dough. Cover and bake on both sides over medium heat until golden brown, carefully tear into pieces, sprinkle with powdered sugar and serve.
We serve apple sauce, cranberries or plum compote with the Kaiserschmarrn.

The sweet temptations from the kitchen! Whether as a dessert after the Christmas feast or as a sweet treat in between meals – the tender dumplings with their creamy nougat center are a real highlight.
nougat dumplings recipe
Ingredients:
375ml milk
70g butter
1 EL sugar
1 pinch of salt
150g soft wheat semolina
1 egg
1 beaten egg yolk
100g nut nougat
In Addition:
2 tbsp butter
70g butter crumbs
1 EL sugar
Preparation:
Put the milk, butter, sugar and salt in a pan and bring to the boil. Stir the semolina into the boiling milk and simmer for about 1 minute over a low heat. Pour into a bowl and leave to cool for 5 minutes. Then stir the egg and egg yolk into the mixture, cover with foil and leave to cool for 1 hour. In the meantime, cut the nougat into 8 equal-sized pieces and refrigerate.
Divide the cooled semolina mixture into 8 portions, place a piece of nougat in the middle of each and form into a ball with your hands. Bring 2 liters of water to the boil in a large pot and let the dumplings simmer in the water (not boiling!) for about 10 minutes.
Melt butter in a pan, add breadcrumbs and sugar and fry until golden brown while stirring. Remove the dumplings from the water with a ladle, drain briefly, then roll in the breadcrumbs and serve immediately.
