The Taxhof cooks cheese dumplings for us

A regional recipe from Elisabeth & Katharina, hosts from Tax yard

Kaspressknödel are a real Austrian specialty that simply tastes great - or as we say here: leiwand! The flat-pressed dumplings made from dumpling bread and regional cheese can be served either as a soup ingredient or as a main course with leaf or coleslaw.

Our guests can order our cheese dumplings as part of the enjoyment basket. You place your order at breakfast and we deliver the desired dish to the fridge of the suite from during the day Tax yard. True to the motto “order and enjoy”.

Until that is possible again, you can conjure up exactly this feeling in your own four walls with this recipe from our cookbook “Picture Book Recipes”. Just cook and enjoy!

Ingredients for cheese dumplings:

The ingredients for cheese dumplings

Quantity for approx. 14 dumplings

  • 200 g spicy mountain cheese
  • 280 g dumpling bread
  • 1 onion
  • 2 medium-sized potatoes (coarsely grated)
  • 1 / 8 l milk
  • 3 eggs
  • salt and pepper

Preparation:

1. Put the dumpling bread in a bowl and sprinkle with a little salt and pepper. Peel the onions and finely dice them. Sweat the onion in a little oil, add the milk and bring to the boil. Pour the boiling milk over the dumpling bread and cover with a lid so that the steam cannot escape.

2. After about half an hour, mix in the grated potatoes, mountain cheese and eggs and knead into a dough. Shape dumplings, press flat and fry in a pan covered with oil until golden brown on both sides. Serve in a beef consommé or on coleslaw / lettuce.

A leaf salad or coleslaw goes well with the cheese dumplings
