The Hotel Bären bakes a Sunday braid

A recipe for a Sunday braid from Mary and Joseph, hosts of the "Hotel Bären"

We normally offer this delicious Sunday braid to our guests at our regional super breakfast in "Hotel Bären" at. Now we would like to share our popular braid recipe with you. Because this braid not only tastes good on special days such as Mother's or Father's Day, but is also a nice change on the Sunday breakfast table.

Ingredients for the "Bären Deli Zopf":

  • 500g flour (400g wheat, 100g spelled)
  • 20g yeast
  • 3 tablespoon water
  • 1 egg
  • 1 tbsp salt
  • 1 pkg of vanilla sugar
  • 50g cane sugar
  • 200ml lukewarm whole milk
  • 45g butter (room temperature)
  • lemon zest
  • For brushing: 1 egg, 1 pinch of salt, 1 dash of milk - whisk


1. Put the flour in a mixing bowl and form a well. Mix the yeast with 3 tablespoons of water and cover with flour again. Add the remaining ingredients to the bowl. Knead with the dough hook of the food processor for 8 minutes. Let the dough rise for 1 hour at room temperature.

2. Then form strands from the dough and loosen the braids – cover with a damp cloth and leave to rise for another 10 minutes. Brush with the beaten egg and bake at 160 °C for 20-25 minutes.

3. Double the amount is required for the heart-shaped Mother's Day braid shown.


To get an extra fluffy braid, add a small boiled and finely grated potato to the dough and knead it into the dough.
