A breakfast highlight in Saalen is our spruce honey, which Ms. Tauber makes every year in May. The spruce honey tastes like honey and looks like honey but is not "made" by bees! Our guests very often ask at the reception where to buy this delicious "honey". in the "Saalerwirt“Unfortunately, this is not for sale, because we want to come over the year with the amount we have produced ourselves. So we are all the more happy if we can at least share the recipe with you 😊

May tops are known to us as spruce honey. This name comes from earlier times, when there was no bee honey.

The breakfast specialty is known under the name Maiwipfel or spruce honey

Ingredients for May tops

  • 1 liter of May tops, these are young, light green spruce shoots that can be "plucked" from the trees in our forests from the beginning to the end of May,
  • 1 liters of water,
  • 1 kg. Sugar,
  • ½ lemon in slices,
  • ½ stick vanilla,
  • 2 cloves

Preparation:

1. Roughly cut the very light and young May tops and boil in the water with the spices for 30 minutes. Strain through a cloth, mix the liquid with the sugar and simmer gently for another 2 to 3 hours.

2. The cooking time depends on whether the result should be a May tree juice as an aromatic sweetness for the tea, a cough syrup or a fine, bitter spread.

Interesting facts about May tops:

The young May tops are extremely rich in beneficial ingredients. It is therefore not surprising that the pine tips have been used for years for coughs and other colds. In addition to the high vitamin C content, the May tops contain essential oils, which in turn have an antiseptic and expectorant effect. A wonderful remedy from nature, which can also be used as a sweet spread.
